We have been asking our suppliers for samples of Pinot Noir from anywhere in the world including Tasmania, southern France, former Soviet Bloc countries and Italy. This winery is based in Chile and has crafted a blockbuster. Located in Central Valley, whose cool days and foggy nights are perfect for this fickle grape, the vines have matured enough to reveal their true potential. Harvests are restricted to four tons per acre to concentrate fruit and are fermented in stainless steel. The juice undergoes a cold maceration to preserve flavors and one hundred percent malolactic fermentation to pick up a creamy texture. The wine is aged for four months in oak to pick up a slight toastiness and extend the creamy flavors. The resulting wine is medium-bodied with berry and black cherry flavors covering the entire palate. This soft but unmistakably expressive Pinot Noir is the perfect wine for spring lamb with new potatoes and asparagus with crème fraîche. Buy it by the case.
