Food pairing
This wine may be drunk throughout the meal. It goes especially well with salame and cold cuts, with pasta and first course dishes from the Umbrian cuisine and with the Mediterranean cuisine in general.

Producer
The Al Molino Gualtieri Farm lies at 350 m (1,148 feet) above sea level at the foot of a tuff hillock called Rocca Ripesena on a well aerated and sun-drenched piece of land rich in clay and volcanic rock. The farm's name Altarocca thus links our wine cellar to the surrounding land. The strong connection between the Altarocca Wine Cellar and the local territory, and in particular with the nearby city of Orvieto (less than 5 km/3 miles away), is also shown in our corporate identity: the cellar's logo, the design of the labels, as well as the names of some of our wines stem directly from the architectural elements of the Cathedral of Orvieto. The strong connection to land, however, is not only expressed on our labels: At the Al Molino Gualtieri Farm, we have cared for vines and olive trees for many decades with passion and dedication, combined with a particular attention to the environment and to local traditions. The leading philosophy of our production is based on a constant quest for quality and sustainability with an emphasis on local typical features. We have stopped using systemic products and replaced them with natural remedies and thus setting foot on the path to complete organic farming. The configuration of the land with many aquifers in the subsoil, allow us to avoid surface watering in our vineyards, but rather forcing the plants to develop deeper root systems and thus conveying to the grapes more of the minerals and characteristic components of our soils. Because of the sizes of our vineyards and the configuration of the terrain, we only pick the grapes by hand and transfer them to the cellar in small crates, so as to preserve the fruits at their best. Although demanding, this traditional method allows us to select the best bunches during the harvest, as well as to take care of every single plant and to ensure their health and longevity.
