Wine maker notes
Each variety is harvested and vinified separately, allowing the grapes to reach perfect ripeness. Following de-stemming, the juice is kept on the skins for several days at low temperatures to extract the fruit’s aromas and color. When the wine reaches 5% ABV, fermentation is halted by refrigeration and the wine is blended. A natural second fermentation in tank creates a delicate “frizzante” (sparkle) in the wine. The second fermentation is halted when the wine reaches 7% ABV maintaining an ideal touch of natural residual sugar.
Highly versatile. A great aperitif and equally splendid with tomato-based sauces, classic Italian dishes and spicy foods. Enjoy chilled.
