Made from organically grown grapes, this traditionally blended Cava (45% Macabeo, 25% Xarel-lo and 30% Parellada) is one of the best values in sparkling wine we’ve encountered. Like Champagne, this wine spends time in the bottle, aging on its lees, before release, giving it a slightly toasty flavor. Unlike most moderately priced Champagne (moderate for Champagne means about 2 or 3 times the price of this wine), this Cava has expressive fruit and a generous texture. True to its Brut designation this bubbly finishes quite dry. Fantastically versatile with food – as well, of course, on its own as an aperitif – use it as a complement to popcorn, fried calamari, spring rolls or sushi: at a price like this you’ll be able to experiment quite a bit.
