Castellare di Castellina takes it back; they also pay it forward – and the proof is both inside the bottle and out. In the bottle is a style of Chianti that can only be described as classic: only native grapes (Sangioveto and Canaiolo) are used and the wine is ruby red, elegant and fresh with intense flavors of red cherries, roasted herbs as well as a suspicion of rose hips. On the outside of their bottles are depictions of native birds that have returned to their estate. (Since the 70's Castellare has been a leader in preserving the ecosystem that is essential to the terroir of Chianti Classico, never using chemicals in their vineyards and maintaining a diverse agronomy, with a quarter of the estate left as wild woodland). This will be great match for a T-bone with thyme butter or a hearty kale and sausage soup.
