Grenache 50%, Cinsault 30%, Syrah 20% from sandy, loam soils of the Coteaux d’Aix en Provence. Named after the Abbey of Saint Victor, whose monks purchased the property in the eleventh century. The monks worked the abbey and cultivated grapes for wine making. Winemaker Laurent Breban farms the vineyards according to organic methods. The rose is prepared in a cold maceration, color is obtained by bleeding, the wine is then racked and fermented. Certified Organic by AB Agriculture Biologique.
