Unlike Pinot Noir, Cabernet Sauvignon is not the first grape that would come to mind when one thinks of the purest notes of fruit. Whether it is the effects of long oak aging regimens or the inherently herbal and earthy character of the grape itself, even young Cabernet is frequently marked by distinct non-fruit flavors. The "Bench" Cabernet from Alexander Valley shows typical Cabernet aromas and flavors that include graphite, tobacco, and herbs; but the incredible intensity of fruit and the lack of oak (this wine is aged exclusively in older barrels) allow fresh berries to dominate the flavor profile. Despite its atypical fruit expressiveness, there is the weight and power that marks a fine Cabernet: the structure is strong, with firm tannins and fresh acids so this wine is built to age and improve for several years. It will stand up to a variety of hearty fare but simply grilled meats (lamb and beef mostly) might be given special consideration.
